
Our most popular tasting. The basics in chocolate. We start with the 44% cacao contents and work our way up to the 80% region. This tasting will give you a good overview of what quality chocolate is. A brief history of chocolate, manufacturing processes, chocolatiers, and ideas on chocolate usage will be covered.
Learn to identify flavors as they evolve during the course of the tasting. This is the perfect way to become acquainted with new and richer tastes.
Two chocolate confections from each of 5 Portland area chocolatiers will be tasted.
Discussion of the flavorings used, cacao origin, chocolatier history and location, as well as flavor perceptions. Literature and offers will be available after the tasting from each chocolatier.
All chocolates tasted will be above 70% cacao content.
Warning: This is for serious and experienced dark chocolate lovers only. We do not recommend it to those new to tastings!
If you love milk and white chocolates, this tasting is for you. Both milk and white chocolates have a higher sugar content than dark chocolates, making for a creamy and sweet tasting.
